Pro Mode. Even DSLR/Mirrorless can’t fully optimize to artificial lighting. This issue is the same with banding What’s being shown is the limitation of the lighting instead of the camera.

Looks like it. For OP: it seems like your phone is simply trying to adjust the colors of the picture to match what it think the ambient light is like and is getting confused. I have no idea on how to fix it though.

Just use manual white balance or pro mode if it has one

There’s no reference for white balance and the lighting (probably artificial) doesn’t help either. If this is done in Auto and the AI enabled, drastic changes may happen since the scene may be interpretted differently and is switching to different modes. Without AI enabled, the changes wouldn’t be that drastic but white balance would be decided on how good your lighting frequency is (if artificial lighting is involved).
This is not an issue as long as it can be corrected manually via Pro mode.
Most likely it’s the AWB (auto white balance) kicking in. I bet you will get that with any camera
