You first need to unlock your boot loader. As of now, it’s a lottery to get it unlocked without paying a 3rd party such as ncunlock.
Once you unlock your boot loader, it’s very straightforward to flash a rom and the one I would recommend would be xiaomi EU since it has the best support with constant updates.
You can find the tutorial on their forum on how to flash the rom once your boot loader is unlocked.
why paying 3rd party?
as far as I know you request bootloader unlock via Xiaomi community app.
They deny it all the time. I have been trying for more than 6 months now.
